Healthy, Super Easy Beef Potato Veggie Soup Recipe

Who doesn’t love a delicious, hearty beef soup, add whatever veggies you want to make it healthy too! My style of cooking and train of thought is,start with a basic recipe and work with whatever ingredients that you already have in your kitchen. 

I have been cooking delicious foods for a while, about 20 years, from scratch, almost none of my foods come from a can. Except maybe a jar of pasta sauce once in a while. I feel that, soups, stews and food in general shouldn’t be canned. Of course unless your pressed on time and you need to grab a frozen meal once in a while. So most of my recipes are super easy to make without using canned food. Again, unless it’s just a jar of marinara or tomato sauce. 

I have tons of recipes I would love to share. Since my family has strong European roots, I have tons of European and Polish recipes to share, along with great American favorites. 

My goal in cooking is to make  food as healthy, simple to cook and delicious as possible. I don’t use fancy techniques or ingredients, besides a few dried spices and herbs, anyone can make these recipes I’m sharing. I try using as many organic foods as possible. If it’s not available, just use regular ingredients! I know not everything can be organic.

First let’s talk about the main ingredients, beef and potatoes. You can buy pre cut stew beef or buy a whole beef roast and cut the roast into about 1 inch chunks. The type of beef doesn’t really matter, Beef roast, beef loin, beef chuck roast, as long as it’s at least a pound of beef, you are ready to go. 

 Now let’s go over the potatoes, that’s super simple, any type of potato will work. Just peel it and cut into about one inch squares. 

The basic veggies in any soup or stew are celery, onion, and carrots. Any other veggies that you add are up to you. You can add frozen or fresh veggies. Fresh always taste better in a soup though. 

Here is a list of ideas for veggies, add what you like ; Bell peppers , zucchini, mushrooms, green beans, broccoli, beets tomatoes, cauliflower, spinach , even asparagus. To my soup that I made for this article, I added Bell peppers, tomatoes, mushrooms, broccoli, green beans, and asparagus. Plus the onion , celery and carrots that are needed for most soups.

chop up into 1 inch pieces 

Peppers

**Please don’t add any vegetables that you don’t like. If you don’t like broccoli, don’t add it to your soup. 

Tomatoes, sliced.

In a big soup or stock pot (you can purchase a good stock pot at any grocery store, just make sure it’s stainless steel) . Start with adding some olive oil and butter, then add the onions and celery, saute/fry for about 5 minutes, then add the rest of which veggies you want. So I added the bell peppers, broccoli, zucchini, carrots. 

Then add your beef chunks, with about 2 tablespoons of oil or butter, dust a little flour on it if you like, about a table spoon. It thickens the soup up just a little bit, this is optional. Then mix everything together with a cooking spoon. Cook for about 10 minutes, covered with a lid. 

Then add your water to the soup, or some type of broth (beef broth or veggie broth) but if you don’t have broth, no big deal. Because you are basically making your own broth with the veggies and beef that is cooking. Then add half a jar of basic marinara or pasta sauce. 

Then lastly, add about two chopped tomatoes, and the diced potatoes. Season with whatever seasoning you like or have. The most basic seasonings for my soups are, salt, pepper, garlic powder, onion powder and Italian Seasoning. You can get all these at any grocery store.  But to my soups, especially if they have beef in them, I like to also add a pinch of chili powder, chopped fresh garlic, Turmeric, Ginger Powder, Paprika Powder and Dill Weed herbs. Again, these are all optional. 

And that’s it. After you added your seasoning. You cover your soup with a lid and let it cook for about 3 hours or until the meat is super tender and starts falling apart. Stir every 30 minutes. And enjoy it when it’s done! 

Recipe :

1 pound of beef chunks or roast, cut into cubes.

1 onion , diced

3 celery stalks, diced 

3 carrots, diced

About 5 medium potatoes, diced 

2 tomatoes, optional 

5 cups of water or broth 

2 teaspoons Salt 

1 teaspoon Pepper 

2 teaspoons Italian Seasoning 

2 teaspoons Garlic powder

2 teaspoons Onion Powder 

4 tablespoons of olive oil

2 tablespoons butter 

Flour, 1 table spoon, optional 

Stir into hot stock pot onion and celery and2 tablespoons of oil, butter. Cook for 5 minutes, add beef chunks, flour -optional, and 2 tablespoons of oil. Cook for about 10 minutes. Then add the rest of the veggies, water , or broth. Then add tomato sauce, tomatoes, cut in small chunks -optional. Then add carrots, potatoes, and your seasoning. Cook for three hours. Stir every 30 minutes. Enjoy!
